It's a good idea to visit an event that a prospective catering service is working, in order to see how they handle it and to observe the quality of their work. Don't be shy about asking if there's an event that you can visit, however briefly; it's possible they can get you in.

Once you've narrowed your catering options down to three, call each and discuss a preliminary budget, head count availability of the date you've chosen, requirements, and the like. You should also ask them to send you a sample menu appropriate for your budget.
