Raisins make a wonderful ingredient for many Indian food dishes. If you need to store them in quantity, keep them in an airtight container in your refrigerator. If they harden beyond usability, pour hot water over them and then drain them immediately on a paper towel.
If you're planning to beat some egg whites for your Indian food dishes, you should let them sit out at room temperature for about half an hour (but no longer) before you beat them. This will increase the volume. Be careful, though -- eggs can age more in a half-hour at room temperature than in a half a day in the refrigerator.
